Mr. Wangs Chinese Restaurant Pickled Vegetables






2 small cucumbers


1/2 radish


1/2 carrot


1/4 cabbage


1 piece ginger


1 red pepper


1 teaspoon salt


7 teaspoons white vinegar


7 teaspoons sugar




1. Remove seeds from cucumber, then shred.


2. Shred radish, carrot, cabbage, ginger and red pepper.


3. Mix together cucumbers, radish, carrot, cabbage, ginger, red pepper and salt.


4. Marinate in vinegar and sugar mixture for 30 minutes.


5. Rinse with cold water and dry with a paper towel.


6. Return vegetables to vinegar and sugar mixture and marinate for at least 6 hours. Marinating for 3 days makes it even better.


(Note: if you prefer a hotter taste, add more red pepper.)
